Scientist collects 4,500-year-old yeast and bakes bread with them

Seamus Blackley, a scientist who is considered the father of the Xbox, entertained his Twitter followers last Sunday by announcing that he would use 4, 500-year-old yeast to make a loaf. To get this special ingredient, he enlisted the help of an Egyptologist and a microbiologist.

In a thread on the social network, Blackley explained that he collected the yeast from an Egyptian pottery that the researchers believed was used to make bread and beer. To “wake her up” he used barley and flour. After a week, she was ready to be baked.

Blackley used the same ingredients as the Egyptians and approved the result. “The crumb is light and airy, especially for 100% old grain bread. The aroma and taste are amazing. I am thrilled. It is really different. You can tell even if you're not a bread nerd, ”he wrote.
