The question of taste is directly related to the presence of some bacteria, the same ones that give the taste of other meats that some people are used to eating, as well as vegetables and cheese. These bacteria can break down elements like protein, providing flavors that our taste buds interpret as delicious.

Common vs. Additive

The difference between a common sausage and one made with baby poop is that while the traditional sausage uses the bacteria already present in selected meats, the “additive” uses bacteria found in the stool of infants, after all this material is rich in two types of probiotics: lactobacilli and bifidobacterium, both beneficial to human health.

Scientists involved in making these baby-sausage sausages at the California Institute of Agriculture and Food explain that children's feces are natural samples of these two probiotics and are, of course, easily obtainable.
